Hurricane Relief Clothes Donation

The HHHunt family will be accepting donations throughout their different communities to help hurricane relief where needed. Currently, we have begun accepting donations of partially used clothing items and shoes. The deadline for drop off is November 19th.

Pumpkin Lasagna

Total Time: 1hr 25min
Yield: 8 servings


  • 1 cup pumpkin puree
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 medium onion, chopped
  • 4 to 6 cloves garlic, sliced
  • 1 pound spicy Italian sausage, casings removed
  • 1/2 cup red wine
  • 1 28-ounce can tomato sauce
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • Kosher salt and freshly ground pepper
  • 1 16-ounce box lasagna noodles
  • 1 large egg
  • 2 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded romano cheese
  • 1 large zucchini, very thinly sliced


Preheat the oven to 350 degrees. Place the pumpkin puree in a fine sieve over a bowl; set aside to drain while you make the sauce.

Heat 1 tablespoon olive oil in a medium pot over medium heat. Add the onion and saute until translucent, 6 to 7 minutes. Add the garlic and cook until fragrant, 2 more minutes. Add the sausage and cook until brown, breaking it up with a wooden spoon. Pour in the wine and cook until reduced by half. Stir in the tomato sauce and herbs and bring to a simmer over medium-low heat. Season with salt and pepper, cover and reduce the heat to low. Simmer 15 minutes, stirring occasionally.

Meanwhile, bring a large pot of salted water to a boil. Add the lasagna noodles and cook as the label directs. Drain and toss with the remaining 1/2 tablespoon olive oil.

Mix the strained pumpkin puree with the egg in a bowl and season with salt and pepper. In a separate bowl, mix the ricotta, 1 cup mozzarella and the romano.

Build your lasagna in a 9-by-13-inch baking dish: Start with a layer of sauce, then top with a layer of noodles. Evenly spread half of the pumpkin filling, then half of the zucchini, over the noodles. Top with half of the cheese mixture and cover with some of the sauce. Repeat the layers, finishing with noodles and sauce; sprinkle with the remaining 1 cup mozzarella. Bake, uncovered, 35 to 40 minutes, or until bubbly. Let cool 15 minutes before slicing.

The Beaufort Food Truck Festival is a community event in benefit of Jaycee Camp Hope. This is a fundraising event towards a statewide residential camp for citizens with intellectual disabilities. We could not be more excited to be a part of this community and would love for you to join us.

Pet Reminder

We have been noticing a pet waste issue around our community. Please be reminded that we do fine $60 for anyone who is caught not picking up after their pet. We want everyone here at Ashton Pointe to enjoy their home. Let’s work together on keeping the community looking beautiful!

Beaufort County Animal Shelter Donations Needed

We continue to be open for donations to the Beaufort County Animal Shelter. You can help the homeless animals by donating: towels, blankets, dish towels, paper towels, cotton balls, blue Dawn dish soap, bleach, dog and cat crates, canned dog and cat food, and more!

Rent Drop Box Reminder

For your convenience, we have a rent drop box located to the right of our front entrance. If you aren’t able to drop your rent check off to us personally, you are able to drop it in the drop box and we will receive it the following morning.

Pool Season Reminders


This will be your only warning:

  • 1st Offence - $50 fine will be assessed if you are found with any type of glass within the fenced-in pool area and you will be asked to leave for the remainder of the day.
  • 2nd Offense – $100 fine & pool/amenity privileges will be revoked for the remainder of the summer.
  • If you are bringing your own music to the pool please make sure to keep the noise at a moderate level in order to be courteous to your neighbors.
  • Guest must be accompanied by a lease holder. There is a maximum of 2 guests per present lease holder.

Maintenance Tip

Did you know that putting ice in your garbage disposal will sharpen the blades? To get rid of sour or musty smells you can put lemon or orange slices in your garbage disposal for a fresh clean scent! And who doesn’t love a fresh scent?

  • If you are the proud owner of an extended cab vehicle, please be mindful and refer from backing over sidewalks. This prevents our sidewalks from being accessible to all residents.

Reminder Mandatory Mortgage Inspection

On October 20th our community will be under a mandatory mortgage inspection. This is a reminder that there is a possibility that we will enter your home for a brief overall inspection of the condition of the apartment. 

If you have a pet please make sure that it is in a crate so that our staff can safely enter your apartment home. We will need to access each room. As always, we appreciate your residency and we are glad to have each of you here at Ashton Pointe!
